Kale Salad

Today's recipe isn't one of my favourites but it is one of the dishes that kick started my weightloss. The dressing is optional but believe me, it makes all the difference when eating it. Before I had it with the dressing I couldn't bare it at all and then when I bothered to make it, I enjoyed it so much more and the kale leaves became so much easier to chew.

Kale Salad 

(Serves 2)

Ingredients

For the salad

  • 3 Kale leaves
  • Handful of Red cabbage
  • 1 Tomato
  • 1/2 Avocado
For the dressing

  • 120ml Olive oil
  • 15ml Balsamic vinegar
  • 15 l Honey
  • 4 Cloves of pressed garlic


Chop up the kale and discard the stems. Finely chop the red cabbage, until you have about a handful. Slice the tomato and the avocado. For the dressing put all ingredients into a container and then whisk with a fork. Put ontop of the salad and enjoy!

Honey

  • Anti bacterial
  • Anti fungal
